Looking for a quick, filling, and nutritious meal? This stuffed sweet potato is your answer! Packed with protein-rich tuna and creamy avocado, this is a colourful, satisfying dish that’s as healthy as it is delicious. If you find the tuna mixture a bit dry, just add a little more yogurt or mayo.

Ingredients

Topping (optional): sliced green onion

Preparation
  1. Pierce sweet potatoes several times with a fork. Place in Multipurpose or Round Steamer. Microwave, covered, on high 15 min or until tender.
  2. Meanwhile, dice celery and pickle; place in a bowl. Add dip mix, tuna, yogurt, and mayonnaise. In a separate bowl, mash avocados.
  3. Slice cooked potatoes across the top lengthwise – don’t cut all the way through. Using a fork, fluff the inside and top with smashed avocado, then tuna mixture.
Tips

Before fluffing the inside of the sweet potato with a fork, gently push both ends inwards to create more space for the filling.
